Chocolate Pancakes (gluten free and vegan)

While I was taking this picture, my (almost) 3-year-old daughter saw this lovely stack of chocolate pancakes and said "Feed me NOW, Mommy!" She then proceeded to sit and wait in her chair, licking her lips. I put her plate in front of her, went to get my own and when i returned, almost all of her pancakes were gone. So if this recipe is child approved, it is likely that most of you will enjoy it too. Best part, it has no funky ingredients or refined sugars and is made in your food processor (which means less dishes!) . Well, minus the cooking part, of course.

These pancakes are chocolatey, but without being overwhelming first thing in the morning. They are made of nutrient dense foods, so just a few will keep you full until lunch time!

In a food processor, combine:

2 ripe bananas

2 cups rolled oats (not instant)

1 teaspoon baking powder

4 Tablespoons maple syrup, honey, coconut sugar or other sweetner of choice

1/4 cup cocoa powder 

1/3 cup milk (I used unsweetened almond) 

2 teaspoons vanilla extract

1 Tablespoon coconut oil

1) Blend until mixture is smooth (this may take a few minutes. If it looks too thick, add a bit more milk. A lot depends on how ripe your bananas are)

2) Heat a teaspoon of coconut oil in a skillet over medium heat until the oil is hot. Use a 1/4 cup measuring cup to pour pancake batter into skillet. 

3) Cook until pancake looks dry around the edges and then flip. Once pancake is cooked through, cool for 5 minutes before serving.  

 

I served mine with whipped coconut cream and sliced strawberries. Whipped coconut cream is a lot like whipped cream except, you know, more coconutty.

 

To make whipped coconut cream:

1) Chill a can of coconut milk (not lite) in the fridge over night. Also, chill the bowl and mixing blades you will be whipping it with in the freezer.  

2) In the morning, open the can and scoop out the coconut cream (it will have risen to the top and the coconut water will have sunk to the bottom of the can). Put it in chilled bowl, add 1 tablespoon maple syrup and used chilled mixing blades to blend until it makes soft peaks.
