Frozen Watermelon "Popsicles"

The simplicity and yum factor of this "recipe" will blow your mind. Making a delicious summer treat truly doesn't get easier than this.

Frozen Watermelon Popsicles


Watermelon is the quintessential summer snack, and freezing it is just to make it better. Not only does it cool you down with its chill, but it also hydrates you with all the water in, watermelon. With the dog days of summer upon us, this is a vital recipe to have in your back pocket for poolside snacks or just afternoons where it is too dang hot to move and you are just jonesing for something frozen. 

 I first made these Watermelon "Popsicle" for my preschool class on an exceptionally hot day and I watched with enjoyment as their little eyes lit up with wonder, amazement, and a little bit of confusion as they sank their teeth into the treat.  These frozen slices of melon on a stick are absolutely  delicious and as simple as they look. I almost feel silly writing a recipe for them, but here I am doing just that. 

Frozen Watermelon Popsicles

This recipe does come with a small warning: Make sure you have adequate freezer space. Especially if you plan on turning the whole watermelon into frozen treats.  Of course, if you run out of space, you will just be forced to enjoy the leftover watermelon on the spot and there are definitely worse things in life.


1 watermelon (or how ever how much watermelon you want to freeze)

1) Cut watermelon into wedges of whatever desired size you like (small for kiddos, larger for adults)

2) Using a sharp knife, cut a slit the width of your popsicle sticks into the rind.

3) Insert popsicle stick and arrange watermelon in a single layer on a cookie sheet lined with parchment paper. Avoid stacking the pieces on top of one another, they will freeze together! Of course, that might be a fun challenge to eat.... 

4) Freeze at least 6 hours before enjoying.
