Guacamole "Pasta"


This recipe actually came to fruition by many great things in life.

Guacamole Zoodles

After a busy Sunday of adventure and fun with my family, I wanted to get dinner on the table as effortlessly as possible. I started to make a classic creamy avocado sauce. However, when I discovered I had no lemons and only limes I decided to roll with it and make my very favorite lime/avocado recipe into a pasta sauce. Combined with some zucchini noodles (more commonly known as "zoodles"), this super easy, oh-so delicious dinner is ready in under 10 minutes with pretty much no cooking required. Lazy meals don't have to be made of junky food, people. This recipe is the prime example of that,


-3 large zucchinis "zoodled"

-3 cloves of garlic

-1 cup fresh baby spinach

-juice of 1/2 a lime

-2 tablespoons olive oil

-2 ripe avocados, pitted

-1 teaspoon sea salt

-1 cup sliced grape tomatoes

-1/2-1 jalapeno, seeded and to taste (optional)


1.  To make the guacamole sauce,  combine garlic, spinach and jalapeno in a food processor, pulsing to mince.

2. Add the lime juice, oil, avocado flesh and salt. Blend until smooth. Add a little water if needed to get desired consistency.

4.Add sauce to "zoodles" and toss until all zucchini noodles are evenly coated. Add tomato slices and stir again.
