25 Easy Veggie-Loaded Whole30 Recipes
I don't know about you guys, but when 5pm hits....I'm a bit of a mess. I'm frazzled from my day at work and dealing with rush hour traffic on the way home. And then I walk through the door, only to be faced with the (for some reason) exhausting task of figuring out what the heck to make for dinner. I kind of hate 5pm.
And I'm sure I have a few fellow 5pm hater here too.

But, I'm trying to get past all that frustration and animosity towards 5pm and remembering that having a few amazing, veggie-loaded meals in my back pocket is key for taking the stress out of weeknight dinners.
I’ve been making an effort to cook oodles of Whole30 recipes lately. And not because I am currently doing a Whole30 (thought I have done them in the past), but because Whole30 recipes usually consist of the elements I consider important to a meal:
rich in protein
high in fiber
contain healthy fat
low in sugar
lots of veggies.
The last one (loaded with veggies) is especially important to me. Because, veggies are jam-packed with vitamins, nutrients and pretty much the best stuff Mother Nature has to offer us. If you haven't noticed (or you are new around these parts), "veggie-loaded" is kind of a theme in my life, how I cook and how I feed my family. And since Whole30 really focuses on the importance of oodles of veggies, I often enjoy using Whole30 recipes for our everyday eating...even when we are not officially doing a round of the program.
