Healthy Chocolate Banana Protein Pudding
I love many things about healthy living.
I love how my body feels and functions at its best when it is well nourished on real food. I love how I know my daughter's body is full of nutrients, minerals and vitamins that will help her to grow the healthiest body she can and will carry with her her whole life. I love how clear my mind is and how my skin glows. I love how much husband and I looks years younger than we actually are because our bodies don't feel the toll of junky processed foods being subsistutded as fuel.
I love all of that. But there is one thing that I don't love (there has to be a downside to everything, after all).
I don't love that there never seems to be anything quick and easy to grab when the munchies hit. Sometimes, you are hungry but don't want to break out the pots and pans and cook. You just want something there and that you can grab. Something in the moment that will satisfy your taste buds but also act as true clean fuel in your body.
It was THAT longing that inspired this recipe. This quick, easy and Healthy Chocolate Banana Protein Pudding is tasty as can be, super kid friendly (I mean, chocolate pudding....come on) and such a snap to make that I can whip together in a minute or two during my weekly meal prep and then have on hand for quick grab-and-go snacks or a healthy dessert during the week. Or, in the heat of the hungry moment! Make it ahead of time or right when you want to eat it! Healthy Chocolate Banana Protein Pudding makes real food eating a little easier.
When creating this recipe, protein was key. I believe when it comes to snacks, there needs to be a heavy dose of protein. Protein that will kill that munching urge and fuel you onto your next meal. Makes 6 servings
- 2 ripe bananas, peeled
- 1 scoop Rootz Paleo Protein Powder
- 1/2 cup cacao powder
- 3/4 cup chia seeds
- 1/4 cup almond butter
- 2 cups unsweetened almond milk
- 2-3 tablespoons maple syrup/honey, or to taste
- Combine all ingredients in a blender and blend on high for 1-2 minutes or until mixture thickens up to a pudding texture.
- Check for sweetness and add more maple syrup/honey if desired and blend again.
- Portion out into individual containers and enjoy immediately or store in fridge for up to 4 days.
