Someone (okay, multiple people) asked me why I veggie-load pretty much all of my recipes. Why do I try to have veggies at every meal. Why do I bother to add veggies to everything…even desserts!?

I mean, if I am going to eat something, I want it to serve my body as much as it can. For it to have as many nutrients in it as possible. This is my fuel after all! And I want to run my body to run on and to raise my family on amazing food that powers us up rather than weighing us down.

And while there are many schools of thoughts on nutrition and how people should eat for optimal health, almost always…veggies are in mix.

The realest for of real food, veggies offer our bodies a diverse source of nutrients, fiber, vitamins and minerals. Now, I don’t know about you…but that is something I WANT at every meal. At every fuel up. So, at every opportunity, I veggie-load the food.

Take the sweet potatoes in this recipe. While they are a starchy vegetable, they a rich source of fiber as well as containing oodles of vitamins and minerals like ironcalcium, selenium. Sweet Potatoes are a good source of  B vitamins and vitamin C. And they are also high in beta-carotene.

And I get to eat my cake (okay, fine its a brownie) and all of this goodness too. So, I ask you, why not veggie-load your food?

Suggested Adaptations

  1. Make them nut-free! Sub the nut butter in this recipe with sunflower butter

  2. Make them egg-free! Sub the eggs in this recipe with 2 tablespoons ground flax meal + 6 tablespoons of WARM water. Combine the flax meal and water in a bowl and let it sit for 5 minutes before mixing them into the rest of the mixture.

One-Bowl Sweet Potato Brownies {Paleo}

ingredients:

3/4 cup cooked and mashed sweet potato

1/4 cup coconut oil, melted

1/4 cup nut butter

1/4 cup honey/maple syrup

2 eggs

3/4 cup cacao powder

1/4 cup coconut flour

1 tsp vanilla

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 cup chocolate chips + extra for topping

instructions

Preheat your oven to 350℉ and line a square baking pan with parchment paper. Set aside.

In a medium bowl, combine all of the ingredients except the chocolate chips. Mix together using a spatula or wooden spoon until the batter is smooth and everything has been incorporated.

Let the batter sit for 5 minutes so that the coconut flour can absorb the wet ingredients.

Fold in chocolate chips.

Spread in lined pan, using the spoon or spatula to make sure that the batter is evenly distributed in the pan.

Sprinkle extra chocolate chips on top (optional).

Bake for 30-35 minutes

Let the brownies completely cool (about 1-2 hours) before slicing. The longer they cool, the more they will firm up.

Once sliced, enjoy one (of course) and then store leftovers in an airtight container in fridge or freezer!
