Radically Red Smoothie Pops
If your kiddo is extra smoothie resistant or you just want a treat that is healthy as any meal, smoothie popsicles are the way to go. They are as delicious and fun as they are nourishing. And these Radically Red Smoothie Pops are the perfect smoothie pop to start with...
These smoothie pops are loaded with antioxidant-rich red fruits and veggies and with a healthy kick of leafy greens for good measure! So healthy, in fact, that they would make for an awesome addition to the breakfast table. Imagine how jazzed your children would be to find a POPSICLE as part of their breakfast spread!? Seriously. Whether it is 100F degrees outside or -3F, I have never known a red-blooded child to turn up to their nose to trying an ice pop...you just have to be sure to load that ice pop with all kinds of plant goodness!
Why are smoothie pops such an enticing way for littles to eat their smoothie? First off, the chilled ice pop helps those hyper-senastive growing taste buds not be so overwhelmed with so many flavors. Second, popsicles are usually served as a treat! When you tell a kid they can have a treat just because, they usually jump on it and don't ask questions. And neither should you! Just freeze the smoothies and serve them with a smile on your face....but try not to eat them all before your kids get to them.

Makes 6 popsicles
- 1/4 raw beet washed and peeled (about 1/4 cup)
- 2 ripe bananas (riper the better)
- 1 cup water
- 1 handful chopped kale, washed and ribs removed
- 1 cup strawberries
- 1 cup raspberries
- 2 tablespoons chia seeds (optional)
- Blend water, banana, beet, and kale until smooth.
- Add strawberries, raspberries and chia seeds (if using) and blend again.
- Pour into 6 ice pop molds and freeze 5-6 hours or until complete frozen.
